Butterfly Pea Blue Waffle Recipe
🧺 Ingredients:
- 1 ½ cups all-purpose flour (or oat flour for gluten-free)
- 1 tbsp butterfly pea flower powder
- 2 tbsp sugar or maple syrup
- 1 tbsp baking powder
- ¼ tsp salt
- 1 ¼ cups milk (dairy or plant-based)
- 1 large egg
- 3 tbsp melted butter or coconut oil
- 1 tsp vanilla extract
🧁 Optional Add-ins:
- 1 tsp lemon juice (for a purple tint!)
- Blueberries or chocolate chips
- A sprinkle of cinnamon
Instructions:
- Preheat your waffle iron and lightly grease it.
- Mix dry ingredients in a large bowl:
- Flour, butterfly pea powder, sugar, baking powder, and salt.
- In a separate bowl, whisk wet ingredients:
- Milk, egg, melted butter, and vanilla.
- Combine wet and dry ingredients until just mixed.
(Don’t overmix! A few lumps are okay.)
- Pour batter into the waffle iron and cook until golden and crisp.
- Serve with your favorite toppings:
