Here’s how you can make Butterfly Pea Flower Pancakes, naturally tinted with beautiful blue hues!
Ingredients:
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup milk (or any plant-based alternative)
- 1 tbsp Butterfly Pea Flowers (dried) or 1 tsp Butterfly Pea Flower powder
- 1 egg (or flax egg for vegan option)
- ½ tsp vanilla extract
- 1 tbsp melted butter or coconut oil
- Extra butter or oil for cooking
Steps to Make Butterfly Pea Flower Pancakes:
Prepare Butterfly Pea Flower Infusion
- If using dried Butterfly Pea Flowers, steep them in warm milk for about 10 minutes until the milk turns a rich blue/purple.
- Strain out the flowers and let the milk cool.
- If using Butterfly Pea Flower powder, simply mix it into the milk.
2.Mix Dry Ingredients
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
3.Combine Wet Ingredients
In another bowl, whisk egg, vanilla extract, melted butter (or oil), and Butterfly Pea-infused milk.
4.Make the Batter
Gradually pour the wet ingredients into the dry ingredients and mix gently. Avoid overmixing; a few lumps are okay.
5. Cook the Pancakes
Heat a non-stick pan or griddle over medium-low heat and grease with butter or oil. Pour a scoop of batter onto the pan and cook for 2-3 minutes until bubbles form. Flip and cook for another 1-2 minutes until golden.
6. Serve & Enjoy!
- Stack the pancakes and drizzle with honey, maple syrup, or whipped cream.
- Add fresh fruits like blueberries, bananas, or strawberries for a delicious touch.
- Sprinkle extra Butterfly Pea Flower petals or powder for decoration
